Description

A cozy and comforting beef stroganoff casserole that’s easy to prepare and perfect for a quick meal.


Ingredients

  • 1 pound beef (sirloin or tenderloin), cut into thin strips
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 cups egg noodles, cooked
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parsley for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until fragrant.
  3. Add the beef strips, season with salt and pepper, and cook until browned.
  4. Stir in the sliced mushrooms and cook until softened.
  5. Add the beef broth and bring it to a simmer.
  6. Remove from heat and stir in the sour cream until well combined.
  7. In a large baking dish, combine the cooked egg noodles with the beef mixture.
  8. Top with shredded cheese and bake for 20-25 minutes or until bubbly and golden.
  9. Garnish with parsley if desired and serve warm.

Notes

Feel free to substitute beef with ground turkey or chicken, and if you’re not a fan of mushrooms, consider using spinach or zucchini instead.
