A cozy and comforting beef stroganoff casserole that’s easy to prepare and perfect for a quick meal.
Ingredients
- 1 pound beef (sirloin or tenderloin), cut into thin strips
- 1 onion, chopped
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 2 cups egg noodles, cooked
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until fragrant.
- Add the beef strips, season with salt and pepper, and cook until browned.
- Stir in the sliced mushrooms and cook until softened.
- Add the beef broth and bring it to a simmer.
- Remove from heat and stir in the sour cream until well combined.
- In a large baking dish, combine the cooked egg noodles with the beef mixture.
- Top with shredded cheese and bake for 20-25 minutes or until bubbly and golden.
- Garnish with parsley if desired and serve warm.
Notes
Feel free to substitute beef with ground turkey or chicken, and if you’re not a fan of mushrooms, consider using spinach or zucchini instead.
