A comforting dish featuring tender beef in a creamy mushroom sauce served over fluffy egg noodles.
Ingredients
- 1 lb ground beef
- 1 can cream of mushroom soup
- 1 medium onion, chopped
- 2 cups mushrooms, sliced
- 2 cups egg noodles
- 1 cup beef broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Sour cream (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and cook until translucent.
- Add ground beef and cook until browned.
- Stir in sliced mushrooms and cook until softened.
- Add cream of mushroom soup and beef broth, stirring to combine.
- Let simmer for about 10 minutes.
- In a separate pot, cook egg noodles according to package instructions.
- Drain noodles and serve topped with the beef stroganoff mixture and a dollop of sour cream.
Notes
For a variation, serve it over rice or mashed potatoes. Add a splash of Worcestershire sauce for extra flavor.
