Description

A quick and creamy Beef Stroganoff that’s perfect for a comforting meal any day of the week.


Ingredients

  • 1 lb beef sirloin – cut into bite-sized pieces
  • 1 medium yellow onion – sliced
  • 8 oz fresh mushrooms (button or cremini) – sliced
  • 3 cloves garlic – minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 8 oz egg noodles
  • 2 tbsp all-purpose flour
  • 1 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Salt and pepper – to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef sirloin pieces until browned on all sides, about 4-5 minutes.
  2. Remove the beef from the skillet and set it aside.
  3. Add sliced onions to the skillet and sauté for 3-4 minutes until translucent.
  4. Add minced garlic and cook for an additional minute.
  5. Add sliced mushrooms and cook until golden brown, about 5 minutes.
  6. Sprinkle flour over the mixture and stir, gradually adding beef broth while stirring continuously.
  7. Bring to a simmer and let it thicken.
  8. Remove from heat and stir in sour cream and smoked paprika until creamy.
  9. Serve over cooked egg noodles or mashed potatoes.

Notes

Salt the beef before cooking and avoid adding sour cream too early for the best results.
