Description
A quick and creamy Beef Stroganoff that’s perfect for a comforting meal any day of the week.
Ingredients
- 1 lb beef sirloin – cut into bite-sized pieces
- 1 medium yellow onion – sliced
- 8 oz fresh mushrooms (button or cremini) – sliced
- 3 cloves garlic – minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 8 oz egg noodles
- 2 tbsp all-purpose flour
- 1 tsp smoked paprika
- 2 tbsp extra virgin olive oil
- Salt and pepper – to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef sirloin pieces until browned on all sides, about 4-5 minutes.
- Remove the beef from the skillet and set it aside.
- Add sliced onions to the skillet and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional minute.
- Add sliced mushrooms and cook until golden brown, about 5 minutes.
- Sprinkle flour over the mixture and stir, gradually adding beef broth while stirring continuously.
- Bring to a simmer and let it thicken.
- Remove from heat and stir in sour cream and smoked paprika until creamy.
- Serve over cooked egg noodles or mashed potatoes.
Notes
Salt the beef before cooking and avoid adding sour cream too early for the best results.
