Ingredients
- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 cups cremini or button mushrooms, sliced
- 1 medium sweet onion, finely chopped
- 2 garlic cloves, minced
- 1 cup low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tsp Worcestershire sauce
- ¼ cup fresh parsley, chopped for garnish
- Salt and pepper to taste
- 8 oz egg noodles or rice for serving
Instructions
- Prepare ingredients by chopping onions and mincing garlic, and have the beef sliced thin and ready.
- In a large skillet, heat a drizzle of oil over medium-high heat and sear the beef until browned on all sides, then remove from the pan.
- Sauté onions and mushrooms in the same skillet until softened, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the beef broth and Worcestershire sauce, and let simmer briefly.
- Stir in the sour cream until smooth, keeping the heat low to avoid boiling.
- Return the cooked beef to the skillet and simmer for about 5 minutes to meld flavors, adjusting salt and pepper as needed.
- Serve over egg noodles or rice, garnished with fresh parsley.
Notes
For a lighter version, reduce the sour cream by half and add a splash of milk or broth.
