A creamy, savory Beef Stroganoff that’s quick to make and delivers impressive flavor, perfect for weeknight dinners.
Ingredients
- 1 lb beef sirloin, sliced against the grain
- 8 oz fresh cremini or button mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups low sodium beef broth
- 1 cup full fat sour cream
- 8 oz egg noodles
- 2 tbsp all purpose flour
- 2 tbsp olive oil or butter
- Salt and pepper to taste
Instructions
- Gather all ingredients: slice the beef, mushrooms, dice onion, and mince garlic.
- Heat oil or butter in a large skillet over medium high heat. Add seasoned beef strips, cooking until browned.
- Remove beef and keep warm. In the same pan, sauté onions and garlic until translucent.
- Add mushrooms, cooking until softened and liquid is released. Scrape browned bits from the pan.
- Sprinkle flour and stir, then gradually pour in beef broth while stirring until thickened.
- Return beef to the pan, add sour cream, and stir until smooth. Heat through without boiling.
- Season to taste with salt and pepper, and serve over cooked egg noodles or rice.
Notes
For a lighter version, swap sour cream with Greek yogurt. Ensure to keep the heat low to prevent curdling.
