Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder

- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour (for streusel)
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold (for streusel)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine melted butter, buttermilk, eggs, and vanilla. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- To make the streusel topping, mix together brown sugar, flour, and cinnamon in a small bowl. Cut in the cold butter until crumbly.
- Fill muffin cups about 2/3 full with batter and sprinkle streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
Notes
Patience is key when baking. Avoid overmixing the batter for fluffy muffins. You can substitute buttermilk with a mixture of regular milk and vinegar if needed.
