Description

Delicious baked zucchini fritters that are crispy on the outside and soft on the inside, perfect for snacking or as a light meal.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 1 cup grated parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste
  • Olive oil, for brushing


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rinse zucchinis and grate them finely. Squeeze out excess moisture with a kitchen towel.
  3. In a bowl, combine grated zucchini, flour, parmesan, eggs, garlic, parsley, salt, and pepper. Mix until well combined.
  4. Form the mixture into patties and place them on a parchment-lined baking sheet.
  5. Brush the tops of the fritters lightly with olive oil.
  6. Bake for 20-25 minutes until golden and crispy, flipping halfway if desired.
  7. Remove from oven, let cool slightly, and serve warm.

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
