Description
Delicious baked zucchini fritters that are crispy on the outside and soft on the inside, perfect for snacking or as a light meal.
Ingredients
- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 1 cup grated parmesan cheese
- 2 large eggs
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
- Olive oil, for brushing
Instructions
- Preheat your oven to 200°C (400°F).
- Rinse zucchinis and grate them finely. Squeeze out excess moisture with a kitchen towel.
- In a bowl, combine grated zucchini, flour, parmesan, eggs, garlic, parsley, salt, and pepper. Mix until well combined.
- Form the mixture into patties and place them on a parchment-lined baking sheet.
- Brush the tops of the fritters lightly with olive oil.
- Bake for 20-25 minutes until golden and crispy, flipping halfway if desired.
- Remove from oven, let cool slightly, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
