Description
A delicious and satisfying meal that combines crispy bacon with sweet, soft onions, perfect for lunch or a hearty snack.
Ingredients
- 8 slices of thick-cut bacon
- 2 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 8 slices of sandwich bread
- 4 leaves romaine lettuce
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Pinch of salt and black pepper
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add sliced onions and cook, stirring occasionally, until golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt.
- While the onions are cooking, place the bacon in a separate skillet over medium heat. Cook until crispy, flipping occasionally, about 8-10 minutes. Drain on paper towels.
- Toast the slices of bread until golden brown.
- In a small bowl, mix the mayonnaise and Dijon mustard together. Spread the mixture evenly on one side of each slice of bread.
- To assemble, layer lettuce leaves, crispy bacon, and caramelized onions on four bread slices. Top with the remaining slices, mayo side down. Cut sandwiches in half and serve immediately.
Notes
For a lighter version, you can use turkey bacon and avocado spread instead of mayonnaise. Fresh herbs can add a twist.
