Description

A delicious and satisfying meal that combines crispy bacon with sweet, soft onions, perfect for lunch or a hearty snack.


Ingredients

  • 8 slices of thick-cut bacon
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 8 slices of sandwich bread
  • 4 leaves romaine lettuce
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Pinch of salt and black pepper


Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt.
  3. While the onions are cooking, place the bacon in a separate skillet over medium heat. Cook until crispy, flipping occasionally, about 8-10 minutes. Drain on paper towels.
  4. Toast the slices of bread until golden brown.
  5. In a small bowl, mix the mayonnaise and Dijon mustard together. Spread the mixture evenly on one side of each slice of bread.
  6. To assemble, layer lettuce leaves, crispy bacon, and caramelized onions on four bread slices. Top with the remaining slices, mayo side down. Cut sandwiches in half and serve immediately.

Notes

For a lighter version, you can use turkey bacon and avocado spread instead of mayonnaise. Fresh herbs can add a twist.
