Description

A warm and hearty Bacon Potato Soup that’s easy to make and full of flavor. Perfect for cozy evenings.


Ingredients

  • 4 slices of bacon
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 cup milk
  • Salt and pepper to taste
  • Chives or green onions for garnish (optional)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and leave the drippings in the pot.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  5. Mash some of the potatoes in the pot for a thicker consistency.
  6. Stir in the milk and season with salt and pepper.
  7. Crumble the cooked bacon and add it back into the soup.
  8. Serve hot, garnished with chives or green onions if desired.

Notes

If using homemade broth, it enhances the flavor significantly.
