Description

Delightful thick corn cakes that can be filled with various savory ingredients, perfect for any occasion.


Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil, plus more for frying
  • 2 cups shredded chicken or beef
  • 1 onion, diced
  • 1 cup chopped fresh cilantro
  • Lime wedges for serving


Instructions

  1. In a large bowl, combine the masa harina, warm water, salt, and 2 tablespoons of vegetable oil. Knead the mixture until a soft, pliable dough forms.
  2. Divide the dough into 12 equal pieces and roll each piece into a small, round disc, about 1/4 inch thick.
  3. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat.
  4. Fry the gorditas in batches for 2–3 minutes per side, or until golden brown and crispy.
  5. Drain the fried gorditas on a paper towel-lined plate.
  6. To serve, cut each gordita in half and fill with the shredded chicken or beef, diced onions, and chopped cilantro. Squeeze fresh lime juice over the top.

Notes

For softer gorditas, keep the dough covered with a damp cloth while working. Don’t overcrowd the skillet when frying.
