An authentic Mexican dish filled with rich, smoky flavors, Mexican Chicken Tinga is perfect for family dinners or special occasions.
Ingredients
- 1.5 lb boneless skinless chicken breasts
- 4 medium tomatoes
- 4 cloves of garlic
- 4 tablespoons olive oil
- 1 sliced white onion
- 1.5 teaspoons salt
- 1 teaspoon black pepper
- Chipotle peppers (to taste)
- Dried Mexican oregano
- Dried thyme
- Dried marjoram
Instructions
- Place chicken in a stockpot, cover with water, season with salt, and boil for 15 minutes or until cooked through. Shred the chicken after cooling.
- Simmer tomatoes in a separate pot for about 8 minutes until soft, then peel and set aside.
- Sauté sliced onion in olive oil until translucent (about 5-6 minutes).
- Blend tomatoes, garlic, salt, black pepper, and chipotle until smooth.
- Combine the blended mixture with sautéed onions, add spices, and simmer for 8-10 minutes to thicken.
- Mix shredded chicken into the sauce and let simmer for 1-2 minutes before serving.
Notes
Feel free to swap chicken for shredded beef or pork. For vegetarian options, consider jackfruit or hearty mushrooms.
