Description

An authentic Mexican dish filled with rich, smoky flavors, Mexican Chicken Tinga is perfect for family dinners or special occasions.


Ingredients

  • 1.5 lb boneless skinless chicken breasts
  • 4 medium tomatoes
  • 4 cloves of garlic
  • 4 tablespoons olive oil
  • 1 sliced white onion
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • Chipotle peppers (to taste)
  • Dried Mexican oregano
  • Dried thyme
  • Dried marjoram


Instructions

  1. Place chicken in a stockpot, cover with water, season with salt, and boil for 15 minutes or until cooked through. Shred the chicken after cooling.
  2. Simmer tomatoes in a separate pot for about 8 minutes until soft, then peel and set aside.
  3. Sauté sliced onion in olive oil until translucent (about 5-6 minutes).
  4. Blend tomatoes, garlic, salt, black pepper, and chipotle until smooth.
  5. Combine the blended mixture with sautéed onions, add spices, and simmer for 8-10 minutes to thicken.
  6. Mix shredded chicken into the sauce and let simmer for 1-2 minutes before serving.

Notes

Feel free to swap chicken for shredded beef or pork. For vegetarian options, consider jackfruit or hearty mushrooms.
