A quick and easy recipe for crispy air fryer eggplant, packed with flavor and perfect for any meal or snack.
Ingredients
- 1 large eggplant
- 2 tablespoons avocado oil
- 2 tablespoons white sugar
- 2 tablespoons low sodium soy sauce
- 2 tablespoons minced garlic (about 3 cloves)
- 1 tablespoon chili oil (optional)
Instructions
- Preheat your air fryer to 350°F.
- Slice the eggplant into approximately half-inch rounds.
- Cut slits in the middle of each eggplant slice.
- In a bowl, mix together avocado oil, sugar, soy sauce, minced garlic, and chili oil until smooth.
- Line the air fryer basket with parchment paper.
- Arrange the eggplant slices in the basket and drizzle the sauce over each slice.
- Cook in the air fryer for 15 minutes at 350°F; switch to broil for an additional 2 minutes for extra crispiness.
- Carefully remove and enjoy hot.
