Description

A quick and easy recipe for crispy air fryer eggplant, packed with flavor and perfect for any meal or snack.


Ingredients

  • 1 large eggplant
  • 2 tablespoons avocado oil
  • 2 tablespoons white sugar
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons minced garlic (about 3 cloves)
  • 1 tablespoon chili oil (optional)


Instructions

  1. Preheat your air fryer to 350°F.
  2. Slice the eggplant into approximately half-inch rounds.
  3. Cut slits in the middle of each eggplant slice.
  4. In a bowl, mix together avocado oil, sugar, soy sauce, minced garlic, and chili oil until smooth.
  5. Line the air fryer basket with parchment paper.
  6. Arrange the eggplant slices in the basket and drizzle the sauce over each slice.
  7. Cook in the air fryer for 15 minutes at 350°F; switch to broil for an additional 2 minutes for extra crispiness.
  8. Carefully remove and enjoy hot.
