Description

A healthier twist on the classic chicken Parmesan, made effortlessly in an air fryer for a crispy, delicious meal in under 30 minutes.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs, lightly beaten
  • ½ cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • ½ cup marinara sauce
  • 6 tablespoons reduced-fat mozzarella cheese


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In three shallow bowls, prepare the breading: mix flour with salt and pepper in the first, eggs in the second, and panko with Parmesan in the third.
  4. Dredge each chicken breast first in the flour, then dip in the egg, and finally coat with the panko mixture.
  5. Place the breaded chicken in the air fryer basket in a single layer and cook for 6 minutes.
  6. Flip the chicken and cook for another 6 minutes until golden brown and internal temperature reaches 165°F (74°C).
  7. Add marinara sauce on top of each breast, followed by mozzarella cheese.
  8. Return to the air fryer and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
  9. Serve hot with your favorite sides.

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months. Reheat in the air fryer for best results.
