A healthier twist on the classic chicken Parmesan, made effortlessly in an air fryer for a crispy, delicious meal in under 30 minutes.
Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- ½ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs, lightly beaten
- ½ cup panko breadcrumbs
- 2 tablespoons grated Parmesan cheese
- ½ cup marinara sauce
- 6 tablespoons reduced-fat mozzarella cheese
Instructions
- Preheat the air fryer to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- In three shallow bowls, prepare the breading: mix flour with salt and pepper in the first, eggs in the second, and panko with Parmesan in the third.
- Dredge each chicken breast first in the flour, then dip in the egg, and finally coat with the panko mixture.
- Place the breaded chicken in the air fryer basket in a single layer and cook for 6 minutes.
- Flip the chicken and cook for another 6 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Add marinara sauce on top of each breast, followed by mozzarella cheese.
- Return to the air fryer and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
- Serve hot with your favorite sides.
Notes
Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months. Reheat in the air fryer for best results.
